I buy my beef from the farmer I help pay market price the day of slaughter, our steers run around 1500# and heifers a little less.  I paid 1.20# for the 1/4 and 200 processing and get about 200 to 225 pounds of meat.  So I pay around 650 dollars each year for my meat.  My calf goes in March this year and already have an appointment for next year in 2023.  All our old cows become hamburger and he sells it for 4.5 # and we can't keep up with the demand.  Raise my own turkeys, chickens, and guineas for myself and just buy a little pork and bacon.

Are you sure you get over 200 pounds of meat?  That is one helluva yield ratio.

65% hoof to hang on a 1500 pound critter =975.  

65% hang to package of 975 = 634 pounds.

634 / 4 = 158 pounds.  And 65% yields on each step is GOOD, I usually figure closer to 60%.  My thought is you are getting 200-225 hanging weight.  (975/4 = 243).  Deboning and trimming gets you down to package weight.
