OK, so how to I remove the front wheel bearing cap?

Cars and trailers I am used to hammering the sides all the way around to work it off. This one doesn't want to budge, does it screw off?

I think they screw on and off. The hubcaps on my CA screw on/off.   You can use the hubcap to force grease into the bearings.

Hope not to damage the cap. I think I will try one of those rubber strap domajiggers

If the monkey wrench doesn't work use a pipe wrench.

I will bet money a "rubber strap domajigger" will not work, a nylon strap wrench might but I would have my doubts. Large Channel locks might work.

Ok, the cap screwed off easy enough.
Removed the retaining nut and now I can't slide the hub off. What the heck is holding it on? I tapped it on the back with a sledge but it still doesn't move.

Charlie, after the nut is a washer, that should come off pretty easy.  Next is the outer bearing cone.  These get stuck pretty often.  tap all around it a few times and then try to take the hub off.

You know, when I did that some 60 years ago and the tractors were relatively new we used a Ford Monkey Wrench.  You had to get a very good grip since the hub nut is rather slipery.  They were tough to do then.  I can just imagine how tough now.
However, the tools are so much better.  I thought I had died and gone to heaven when Vice Grips were invented.  We could clamp the three joint pieces the bagger whent on.
