Beef is crazy ! Those guys who got 3 million together and are gonna start a meat packing plant -in my opinion - will have a rude awaking - first off 3 million isnt that much nowadays - and the 4 big meat packer will put the squeeze on them

IMO, the guys in the sewer section have all of the answers, it's the current resident of the WH for some reason (wrong)

Buy our meat on the hoof, pay a Farmer for those portions of an animal(1/4 or 1/2) and then pay a Processor to kill/butcher and package our stored meat. Current cost of Beef in freezer less than $7.50/lb for ANY and ALL, for a 1/2 hog paid right at $6.80/lb but have a ham and some hocks being cured/smoked so will be a little extra for that. Chickens we have seven in freezer, $8.50 EACH, raised, laid eggs, got to a low egg production and were slaughtered then processed and packaged/rapid frozen, around four lbs each.
I buy as LITTLE as have to at a 'Store'.

I completely understand the prices of local places - straight off the farm slaughter houses , those prices are always higher - the common people go to the store and get it alot cheaper than the I know what i got farm price- and move so much more - the grocery stores and big packers got the market cornered already

Freegas, anyone can get on the lists, get local meat locally processed, happens nearly everywhere.
Just have to have freezer and space to store. |

There is a law suit here in MO, local cattle company built there own processing plant, (cost millions), and had meat in the Springfield area HyVee stores. All the sudden get told their meat doesn’t pass their standards and pulled all their beef off the shelves but won’t tell or show what standard they don’t meet. Racketeering is suspected from a major chicken company.

We drive to Western KS every year to pick up half a beef and a whole hog for the freezers.

Sold an open 2 year old Guernsey heifer last week. Decent size, weighed 1135. Check to me was nearly 1100. Problem is I figure my cost into her was close to 1400.

Have done that in the past, so much easier/cleaner and less time for ME to be doing it, to allow a Shop with the saws, wrapping systems and end disposal of remnants services do it.

Freedguy you need a new hobby you can raise and process your own meat since the price of things bothers you so. Start with a hog the recipe saw that cuts wood will split a hog. But since you don't think anything on u tube is true, I don't know how you will could learn. But the yuppies out here my one son hangs with where starting to want to learn meat processing so I think there is a lot somewhere on the net.
I know more fun to make fun of those of us you think don't know anything. But learning rather than criticizing could get lots of new friends, and money in your pocket.

We have grain finished beef for sale, quarter, half, whole, or even standing if you want to process. Can pick your steer if you take a whole one and then have your choice of black or black/white faced baldy. I will say that processing charges have went up a few cents on last groups killed. Don’t think they will ever drop. Local butcher dates are currently in 2023 if not booked.

Paid around that to the raiser of the beef, the second amount is for processing by a local Meat Cutter. Half is cut out of fresh slaughtered animal, is dry aged two weeks at the kill shop then moved to butchering area, the beef is cut to order for two quarters(Mix of all the meat of one half) or a full half, then is Vacuum packed and sent to a FastFreeze freezer where sits until picked up. We get more steaks and burger where another couple gets Burger and roast sized pieces for larger family meals(Have Kids). All comes out of one animal.

A farmer north of here runs a game ranch. Sells hog hunts for $450, weapon of choice. They are processed on premises ready for the freezer. He does not cure any meat. Accountant and I have learned to cure meat here. Not particularly difficult except slicing and wrapping bacon. Have eaten little beef for some time as venison has become red meat of choice.

Butchered 2 deer this year, cost, time. Retrieved arrows so no cost there. Lots of steaks and stew meat in freezer. Cost, a bottle of peppermint schnapps to keep us warm while butchering. Picked up box of shoulders at store, out the door $88/1.50/lb. Mixed with 50lb venison, spent afternoon enjoying schnapps and good friends. Got enough meat to last til next years season. Don't eat over priced store meat, not even chicken, we raise our own. If I looked, could probably find an old milk cow for more meat but honestly, don't need it. |

Yeah, I know how it works, been around it for 50 years. Sure am glad you thought I needed a lesson though. My price to customers is $2.50 per pound hanging weight. Butcher gets $30 to slaughter, and about $0.45 per pound hanging weight to cut and wrap. THAT'S WHY I SAID NETS $4.25.

Problem here is finding a butcher. Guess here are so backed up you have to make an appointment to process the pigs before you buy the piglets

Is true there Dr P, even for our beef and hogs we had to be scheduled on a hard list some three months prior as the number of meat cutters is dwindling, shops are closing up in every state.

Yep, I had the 2021 year booked by April, will book the whole 2022 year in January. Fall of 2019 I put 3 perfectly nice beef on a trailer to an auction because I had no takers. Now sold out over a year in advance! Crazy. Basically the same number of butchers around here, just people got scared of store-meat-covid issues.

Each year when we pick up our beef we get on the list for the following year. They give us a warning call about two weeks ahead so we can arrange and be ready.
