What would cause 5th and 6th not to engage while the rest of the gears do?

check the linkage first and see if the lever is moving the control far enough.

So, does it "click" into 5th and 6th and stop moving?? or does the lever not move that far ahead??

I got a 7020 powershift not too long ago and it also will not shift down to 4th like it should with clutch pushed halfway down . It wants to kill the tractor. Also it is easy to miss a speed and seems like there is too much play in the shifter.

tractor does lurch a little in 5th and stops, doesn't lurch in 6th and just rolls to a stop. Happened while hauling the second load of manure down the road.

Are you sure 5-6 are the only gears that don't pull in? Hold the brakes and shift from 1 through 6 see if some others are week.  MACK

The next time you stick it in 5th or 6th and it stops moving, see if the power steering still works or not.

The power steering still works and other gears are fine. Could the A1 clutch set not be working since those two gears use that set and/or could the 6 bolts on clutch hub be broken too?
