I know there are lots of variables, but what octane of fuel would one use if cranking pressure is around 200-210 psi?

100 to 104 should be good enough. Your total ignition timing (at full throttle)should be around maybe 20 degrees?? and set on a dyno to verify that is the best timing setting. Stock timing of 25 to 30 degrees BTDC is too fast with that much compression.
