What do you guys use to go from the hydraulic pump to the two way valve body?  I picked up parts on ebay and the dude had thin wall tubing here, which isn't rated anywhere near the PSI that the pump will produce. 
 
Also, what grade/material fittings should I use?

I went to my local carquest where they make hydraulic hoses, I think mine was $25 for a 24" piece to my RAM.

I got away with brake line for a few years until it cracked next to the flare.  If you're really careful not to scratch the tubing, or if you polish off any scratches before using it, you might be OK.  I was fortunate to find an NOS tube for mine.

decided to have some custom hoses made up at a local joint - they specialize in all kinds of custom hydraulic applications
