I am going to install two 1100 cca batteries and make battery cables for them. What size should I go with? I have plenty of 2/0 cable but should I go larger?

I always use the original 4-battery cables cut to length for 2 batteries. Two batteries....two big cables.

I use stud top group 31 batteries.  I think the eyelet and stud is less trouble than the clamp and post set up that came from the factory. There are charts on the www that will tell cable gauge needed for the length and amps on the circuit.
