Kids got me a couple boxes of mixed nuts for Christmas... I can eat peanuts and cashews, but 2-3 kinds are kind of hard on the teeth..... Anyone got a recipe to use nuts ?  Other than blend them and try to make peanut butter ?  I DO like peanut butter !

My wife being retired and liking to cook new stuff,has been cooking "keto diet food" which is a low carb diet. Our daughter and SIL are trying to be healthy and really trying to follow the whole thing. But to your question the keto stuff uses almond flour in place regular flour in many cases. Don't know how much grinding or hammering it would take make your own.

i have been Googling "make your own peanut butter"....... dont seem too hard if you got a GOOD mixer or grinder....... might give that a try.

grind them and put in bread/brownies/on ice cream/cake/can ad them to about anything.

Virginia makes peanut butter from the peanuts that I grow here all the time. Its not hard and you have blend it to your taste but its good.
don't keep forever cause you don't put preservitives in it, so make smaller batches as you need/use them.
Put a single layer of nuts in cake pan, roast till almost done, ( they continue to cook after you take them out so dont leave in too long!)
cool them then toss them in a food processor ( heavy duty one is best) and chop them up. Add corn syrup, pinch of salt, butter, and whatever else you like in and mix again.
You have to add till you get it however thick you want it.
Do small test batch first to test your skills and go from there! not hard to make.

May be try steaming or pressure pot them to make them softer for your chew.
