I have a 7040 PD without the 3 hydraulic pumps (they were gone when i got it). Has anyone used a single pump, or different setup?

Pump #1 is the gerotor pump and makes the transmission clutch and brake work. Pump #2 is for the power steering, rear end lubrication and charging of the main pump. It is also a structural component of pump #1. Pump #3 is the main hydraulic pump and also provides for the power brakes. I suppose you could mount a double-pump on the engine (there's not a place to do that without engine changes) and you'd have to figure out how to provide 15 GPM to the transmission circuit and then 5 GPM to the power steering circuit, etc. Remember each circuit draws oil from a different reservoir, and then there's a matter of plumbing this new system. Just find the correct hydraulic pump that bolts right into place and works like it's intended to.
