Changing the all the oils on the tractor last night per the Owner book the capacity on the hand clutch is 10 quarts Which Equal 2 1/2 gallons. But the dipstick shows that I am way over full. Does any know the correct amount of oil for the hand clutch?

Somewhere between 2 and 2 1/2 gallons. If you're not happy with what you have, drain some out.
