Simple explanation, A single phase motor has a starting windings, running windings, and a switch that switches the motor from starting windings to runnings when it gets up to speed with one(110V) or two hot legs(220, two 110V) feeding it.
A three phase motor only has running windings with three hot legs(110V) feeding it. No capacitor, switches or starting windings.

I'd be careful messing with those wires, Shameless, there could just happen to be a voltage surge when you lease expect it and the machine could go up  in a poof of smoke, just saing.
