Does anyone know of a list of all the farm equipment that Allis Chalmers made, including the odd short lived things, like sugar beet harvesters and bale loaders?

You need to find a copy of Norm Swinford's book; "Allis Chalmers Farm Equipment, 1914 to 1985"  Pretty well everything is documented in there.  I think it is out of print now, but you might find a copy somewhere.
