it's a pretty straight forward procedure. Drain coolant, remove hood, valve cover, rocker arm shaft, push rods and head bolts. If there is no reason to remove the manifold, leave it alone. Carefully remove the head, making sure you have a good place to set it down.
My advice would be to buy an AC Service manual.
Head gasket failure is not usually a problem in the 201 or 226 AC engines. I'm not saying it's not the problem, but a lot of head gaskets have been changed without fixing the initial problem.
If you have coolant in the oil, DO NOT REMOVE THE HEAD! Pressurize the cooling system and try to find where the coolant is coming from (it will almost certainly mean removing the oil pan). Find out the source of the leak before you remove the head. A few possible causes may be a hole in a liner (sleeve), defective O rings on the liner, a crack in the head or block, etc., but the first step is to find out what is causing the problem, rather than throwing unneeded parts at it.
