Drove past a property this evening that had a "hand made" sign advertising duck eggs F/S. I will admit that to my knowledge, I've never had them. My question is, are they similar to chicken eggs, or are they a "little" on the gamey side of the plate ?

If I recall, duck eggs a generally a bit larger than chicken eggs, but that depends on the breed of chicken vs the breed of duck. The percentage of the yolk in a duck egg is larger than a chicken egg regardless of the size, if my memory is correct.

I tried to follow the science, but it was not there. I then followed the money, and that’s where I found the science.

Alledgedly on a duck egg, the white part has more flavor than on a chicken egg. The duck egg also has more albumen, a protein. And is a favorite of bakers. Makes cakes fluffier or some such nonsense. They sell for a premium to bakers at farmers markets.
My taste buds cant tell much difference. But when I give the duck eggs away to folks at work they usually bring something g they baked with them in for us to snack on. TDF |

A woman walks into a bar with a duck under her arm. A drunk looks up and yells hey did you get that pig? Woman says that's not a pig it's a duck. Drunk says I was talking to the duck. Edited by Walker - 10 May 2022 at 12:29am |

Could have just done a Web search. You know, as in feet, so don't get your feathers in a bunch.
You know why ducks won't fly upside down? So they don't quack up. |

When I ate them they were very rich flavor.
1 egg was 2 chicken eggs for me. I could take it or leave it. Good for baking.

Get your ducks in a row, but don't put all your eggs in one basket.
