I have a 1940 AC. I have a lot of missing or broken bolts. Is there any reference material to find sizes and grades of bolts so I can buy new ones?

I would say all the sheet metal would be fine with grade 2.  Anything holding structural should be 2 or 5.  Anything engine should probably be replaced from AGCO.  Parts book will list part number but not size.

easier to use grade 8 for everything......

Grade 8 is stronger, but not suitable for all applications. Its considered to be weaker for shock applications than grade 5 and for sure too strong for shear bolt applications where grade 2 would generally be specified so the bolt shears before damaging the shear bolt holes. Then grade 5 often costs more than twice the price of grade 2 and grade 8 a lot more than grade 5 so using grade 8 where grade 2 would be plenty strong gets expensive though having only one grade on hand is handy.

Look at the online AGCO parts list books. Each page calls out Allis p/n for the bolts.
The last page in the parts book is titled Hardware List, it states the size of the fasteners.
