Wondering if it is possible to change the voltage in my 6v generator to 12v by changing the voltage regulator... does anyone know? I don’t know much about these 6v generators.

Theoretically you can get 12 volts from a 6 volt generator, but not at any useable current rate. I doubt that adding a 12 volt regulator would do you any good. If you're going to use the generator, have someone like Steve rewind it for 12 volts and match a regulator to it. It would cost less and you'll have a better system if you simply convert to an alternator.

A generator wound for 6 volts should be able to put out 12 volts if you use an appropriate 12 volt regulator AND turn the shaft twice as fast. It most likely won't put out 12 volts (actually you want 14.2 volts for proper battery charging) without turning faster.

The only way to make a 6V Gennie put out 12V's is to completely gut the unit, fill it with 12V components, (including the arm) and mate the correct 12V VR to it to complete the package. I do the complete changeover with new VR all set up on the 881 machine ready to hang back on the Tractor for around $350. plus the ride. You get to keep the OEM look, yet you've upgraded to 12V's. It would also be a good idea to renew all wiring & components, and do the same to the Starter motor. Running 12V's through 6V field coils tends to make the Starter a little on the violent side. Cracked nose cones, bent drives, premature worn ring gears are just a few of the issues that come to mind. Can the 6V Starter handle the 12V current? Absolutely! Will it last with regular use?  NO.
