Can someone explain to me the difference between Zenith carbs when one model number says it's for kerosene and another one doesn't? Will the kerosene model not work well on a gas C?

A Carburetor that's set up for Kero or Gasoline will work fine. As Gerald mentioned, just a little tuning is the only difference needed. You usually don't even have to go after jets or anything like that... HTH

Spark ignition engines running kerosene or distillate generally were started on gasoline to warm them up so the heavy fuel would vaporize and the intake manifold gathered more exhaust heat for that purpose.
