Did find enough berries to make 9 quarts total from the freeze damaged plants this year. Here are the last 6. They will taste good in the middle of the winter!

AC, what type of preservation are those. I have never seen them done that way. We have very few left. We picked almost 7 weeks this year. I was pleased. Tracy

It's the way we do peaches too---sugar water, bring to rolling boil wait a couple mins.----dump in fruit ----heat up till fruit is hot ,(dont cook,--just get hot)  then put into hot jars. Everything has to be kept hot during the process. The lids, the fruit, and the jars while filling.
I have 3 burners going on the gas stove during the canning. lid pan with water to keep lids hot, jar pan with water around the jars to keep them hot till full, and the fruit pan to keep fruit hot till it goes into the jars-----gotta work fast but it does work good and the sugar goes into the fruit after sitting for a while.
In the winter it really tastes good when you have more time to enjoy it.
I have used this method for over 50 years and it still works! lol!!  ( mom taught me how to can when I was growing up!--moms are great!)

I'm thinking a couple shots of vodka in those would make them an excellent winter time snack.  Smile

we measure the fresh cleaned berries in a quart jar. Use 3 quarts in a batch
It takes almost a pint of water per quart, so we go a little shy of 3 pints water, and 2 cups sugar, depending on how ripe or tart your fruit is. You have to adjust the amount to your taste.  Then bring sugar to rolling boil and let roll for a couple mins. and dump berries in and heat up to near boil, then turn heat down and can them.
Not really hard to do just takes a little time, BUT in the middle of winter it  makes it all worthwhile! lol!
