I have a gallon or so (split amounts 3 different unmarked containers), that is gloss and/or semi gloss white latex. I have a ceiling to paint, but want flat white, I know adding water will cut down the sheen somewhat , but is there a better trick to converting gloss to flat?

"If you can't find a paint color in a flat finish, you can simply mix some corn starch in with any type of paint and the result is a nice flat finish."
 
The blurb didn't mention any amounts. Also I would make a slurry of some paint and starch, then add some or all of that while mixing well. Less chance of clumps in the paint that way.

Lower quality paints that aren't specifically made for ceilings can be pretty drippy - you might want to test them first.

I would think adding the corn starch would also serve to thicken up the paint as well

I would just go buy some ceiling paint and forget the other stuff. You have to make sure the paint is all boxed together. You start mixing paints and it can be a problem down the road. Flat ceiling paint is cheap enough.
