How do I choose the right water injection for my D21?  Ed has already gone through the pump and I installed the new injection, now would like to ad water injection to it.  Some companies advertise different stages, I just don't know which one to choose or do I just build my own kit and just wing it?

Just "winging it" may give you with a bent connecting rod or worse. I've always used "Polar" brand windshield washer fluid. For me, it's easy, locally available and a consistent strength/mixture from one gallon to the next. I would assume other brands would be very similar.  12 ounces sprayed into the air cleaner to turbo air inlet tube in a 30 second time frame is a good place to start. 16 ounces would be max. This is talking a relatively stock engine and less than 3000 RPM top speed. I always had a switch hidden so when the throttle was just at the wide open point, it would turn on the juice. Do not turn it on until you are down the track quite a ways and under a load, but haven't lost more than 100 RPM yet. Do NOT ever lug the engine down with it turned on !! If the engine pulls down to 2,000 RPM, cut back on the throttle enough to shut off the juice and then be ready to push in the clutch. A windshield washer tank/pump combo is cheap and easy. Make a nozzle and test the flow.

QUESTION FOR THE DOCTOR?? I just play with the older tractors and gassers only, but I'm curious about this whole concept of injecting water/methanol into the intake on turbo diesel engines. Would you mind giving a little tutorial? Thanks, Kip.

It's a secondary fuel source. It lowers exhaust temps and adds HP. I can take a stock 160HP 7060 for example on the dyno right at 160 HP and turn on my homemade system of 12 to 16 ounces ( per 30 seconds rate) sprayed into the air stream between the air cleaner and turbo compressor wheel and the HP JUMPS up to 220-240 HP immediately. I have seen fire out the end of a chrome stack at a night tractor pull and when this system is turned on the fire disappears and the engine gains RPM.

You need high pressure pump. I suggest 12 volt hydraulic unit. Run nozzle after turbo in crossover pipe. I'm running Fair Valley water kit with 2 nozzles. Mechanical drive vane water pump plumbed to boost activated Simpson Valve. Water comes on at set boost psi and increases amount as boost increase.
