Every so often while in motion one side of the brakes likes to lock up. Any idea on what it could be?

I think if you take the cover off and pull the disc out you will find your problem. Stretched spring,worn out ball ramps or broken brake material

Wear a mask when you remove the cover, the asbestos dust in there is harmful. Vacuum the dirt and dust before disassembling. The balls and ramps as said above are a common issue. Thankfully mine did not have flat spots worn in either. Installed new brakes and cleaned everything well and they work great. Not too bad of a job since they are external brakes.

When it locks up, it usually means it is time to replace the shoes and pads.
