nooooooo.....not cigs/cigars! altho I do miss them....anyways, gonna be smoking lots of fish this summer. I see down south they use lots of maple wood for smoking fish, which maple tree works best? I have numerous maple trees in my yard i'll be trimming and thought maybe puck some branches for smoking. my trees are silver maples. i'll be pucking more apple branches next week for my smoker.

I have had people tell me they used any wood for smoking meats and fish. Everything from Oak to Mesquite" which one barbecue professor claimed was just good for warming your hands on" to Maple and the fruit woods Apple,Cherry . Never heard of using Piss Elm or Willow! I like Hickory!

I wouldn't think it would matter much what type of maple, though I'm sure each has their thoughts. Personally I like hickory too for all purpose stuff, and a little apple wood when grilling pork chops if not hickory.

I remember a lot of fish fries featuring them big ole Suckers from when I lived up there. Always thought they be a good smokin fish. |

Micharl remember those ties need to be soaked in tar for the good smell, Shameless I use wild plum and apple wood and have never been disappointed.

ANY fruit tree works best. Apple, plum, crab apple, pear, peach, if it grows fruit, it's GREAT for smoking.
Get yourself one of those 55 gal plastic barrels with the removable top and put as much chunks as you want in and then cover completely with water and let it sit. The wetter the better. Put the cover on to keep bugs, birds and dogs out... |

I have a big trash container full of apple wood, and a few sacks of various different wood I've collected from places like Bass Pro and Cabellas. I have always went back to the apple wood for about everything, but have just heard of the maple wood for smoking....mostly fish. I quit wetting my smoking wood a few years ago. less mess. John...we do eat the carp out of the Missouri, however we get it from way up north, they are cleaner, not muddy like when caught down here. that's good eating! and I've quit using pallet wood for smoking meat too! had to keep cleaning out the nails and staples! all our RR ties here are concrete. I think i'll try sum maple on sum fish this weekend ...or maybe after I put the machine away tis coming week. I have salmon, walleye, and white fish in the freezer.

I use apple wood or cherry wood. that's what I have growing in the yard and have to trime them. I just keep the large branches and use them also take enough in to wook for the other guys that smoke. what I don't use by the end of the year goes on the fall bonfire.

I don't have a smoker, but at times, I'll put some wood in the corner of the grill. For that, wetting the wood is a must.
Ya, you'll have a hell of a time getting smoke outta them railroad ties from your neck of the woods! LOL As for the wooden ones like we have, I'm pretty sure they would instantly kill me from the inside out. I've built my cattle fences with RR tie posts for years. Handling them and working with them gives me a rash on my wrists. Originally, after handling them on a fence project for a week, I'd have a rash for a few days. Now If I handle them for a few minutes I have a rash for several months, so no more RR ties for this guy. The rest of you can just worry about longer term things like cancer, I'll be a goner from the reaction in my insides. And yes, I know the original comment was a joke, just off on a tangent here. But, seriously, probably a good call on avoiding the pallet wood, for reasons in addition to avoiding the nails and staples. Sorry for the tangent.

Never smoked fish, but I use a lot of maple. It easiest to get free! Nice mellow flavor. Works really good with pork loins.

I'm thinking about smoking chicken with soft coal. Did I say I can't stand chicken, sorry. Shameless I'll bet whatever you use it'll be good. The best salmon I ever ate was in South Kansas City, off a smoking grill. They used apple. Sure glad to hear that's all your smoking now.

while watching that Discovery channel about Alaska, they were smoking their fish with alder wood. I couldn't find any of that around here to buy, and asked Bass Pro if they could order me in sum? they did and called me when it came in. was in a bag just like any other smoking wood came in. we tried it last year, and to tell you the truth...I wouldn't walk across the street to eat anything that was smoked with alder wood! i'm sure that that is about all they have up there to use and that's why it's used. I have an apple tree that split in a storm, and I've been cutting that up and storing/using it for years, still have a lot to cut up. I've smoked with dry and green Applewood, both with the same results. I have to cut/trim sum branches off on 2 maple trees this spring. one is a silver maple and one is a different kind of maple. not sure what until I can look it up. I have all the other kinds of smoking wood that has been available for sale around here.

I suspect a hard maple, like sugar maple, would be best. Wouldn't want to use Cottonwood though...

Has anyone used the bark from a Scaley Bark Hickory? I have several of those trees down at the cabin and I always wondered about using the bark as it is all over and would be easy to collect.
