Woke up this morning slightly disconnected and looked out the kitchen window to see 3 little feral piggies eating bird seed under our bird feeder 10 feet from the front door. They was a gruntin and having a great old time.
By the time I got my head screwed on straight and headed for the locked gun safe they had enough to eat and skeedaddeled down the hill and passed my unbaited hog trap and back into the woods.
We stuffed ourselves at suppertime yesterday with grilled marinated feral pork loin sliced a half inch thick and sliced large Cousa squash. Cousa is a light green Mexican Type Zuchinni .  These wild young hogs are some of the best eating available and free for the taking.
If it wasn't so hot and we didn't already have a freezer full of wild little porkers I am tempted to bait the hog trap again.  This time  for nothing else but the boneless  backstraps.

I usually just toss the ribs and flank meat. Somebody needs to explain to me where bacon comes from and what do it take to turn raw meat and fat into sliced bacon.
I would like to smoke a couple of hams one of these days. I was thinking. We heat the house with seasoned oak. Could we smoke a ham by hanging it in our brick chimney next winter
